I do something similar- once I have a plot, I usually have between 1-3 scenes that I want in the story and tend to work around those. I am a linear writer too. Even if I know something is going to happen in the future, I can't just write it and I want to get there naturally.
I'm not good at skipping around, though sometimes I wish I were... Same.
Right now, I am working on my role reversal fic (which I finally updated after almost a year!) and it involves trying to researching random DC characters to tie the plot together and overthinking the implications of the actual role reversal.
